Partners Josh and Jodie, define Pickle Shack as ‘a young and ambitious, creative food company providing tailored catering solutions for any event.’ They cater for all kinds of occasions from events, weddings, pop-up restaurants, private dining and more. Their food brings innovative twists to old favourites.
Chef, Josh McDonald-Johnson, has worked with and been influenced by some of the UKs most successful and celebrated chefs, including Michael Caines, Daniel Clifford and John Campbell. His unique style has been formed by learning the fundamentals of classic French cookery with Michael Caines, coupled with time spent in a Devon smokehouse, and more recently working with more modern preparations such as ‘molecular gastronomy’ and sous vide.
I was kindly invited to attend Ashburton’s Grub Club pop-up event. At the centre of the quaint village, inside the town hall, Pickle Shack worked their magic decorating the room with tables, chairs, flowers and candles to create a warm and cosy setting. With two long tables, the communal seating enticed fellow foodies to socialise with one another.
The set 3 course meal was introduced by Josh himself:
Beetroot bread with pink pepper and thyme butter.
Marinated broad beans, red pepper puree, toasted seeds, cucumber ash, flowers and salad leaves.
Slow cooked duck leg, crushed blue new potatoes, tree spinach, orache, roast carrot and spiced duck jus
(V – Cauliflower and polenta fondant, crushed blue new potatoes, tree spinach, orache, roast carrot and herb sauce).
Blackcurrant tart, toasted marshmallow, strawberries and lemon balm sugar.
Pickle Shack also aim to source 80% of their ingredients from within a 10 mile radius of each venue they cater. For example, at this particular event, the duck was from Sladesdown Farm, Ashburton; the vegetables, salad and flowers from The Husbandry School, Newton Abbot and the herbs and blackcurrants from Josh and Jodie’s Garden, Feniton!
The food was uniquely delectable and it was apparent a great night was enjoyed by all.
Overall, this is a talented and innovative company with a passion for food an admirable support for local communities.
